How to make an avocado panini.

The acidity and intensity of the sun-dried tomatoes compliment the mild and creamy avocado perfectly in this sandwich. 
The basil, then in turn, compliments the sun-dried tomato. 
A little cheese for a yummy texture. 
It's a restaurant-worthy sandwich made at home. 
To make it a true Italian-style Panini, use Ciabatta bread.

1. Drizzle olive oil over fresh bread slices. Put in the oven until golden brown on both sides. 
2. Add a layer of cheddar cheese, avocado, sun-dried tomatoes and a dash of salt.
3. Wrap in tin foil, and return to the oven until the cheese has melted. (About 10 minutes). 
4. Open sandwich, and add fresh basil leaves. 
5. Press closed.  Slice in half on the diagonal to serve.
