Sauteed mushrooms with balsamic vinegar and kale

How to make a mushrooms and kale lunch.

Here at our home, we've just celebrated our daughter's 2nd birthday, and Halloween, within days of each other. Lots of fun and LOTS of sweets!!

Of course the short-stuff that I am, my jeans instantly got tight. Wonderful. So, (*sigh*), back to healthy again. Like I've said before, we do fall off off the health wagon quite often, but we get back on it too. 
Winter has set in here in PA. Lettuce is starting to look pretty sad in the supermarket, which makes salad less appetizing.  So, I go to my staple of fried, dark greens.  It could be any leafy, dark green.  Spinach and Kale are the two I always use.  Here, I added mushrooms, and balsamic vinegar. 

This makes for a very healthy lunch.  It's just minutes in the frying pan. I include egg (scrambled or fried), so that I don't get hungry instantly. 
It's also a great side dish for a good winter's dinner!
