Alexandra's Buttermilk-Blueberry Breakfast Cake

I am so excited to share this amazing recipe! This year, was my first time hosting Easter, and this Buttermilk-Blueberry Cake made it a huge success. The guests couldn't help but get second and third servings, it was that good. 



I found this recipe, while reading one of my favorite food blogs, www.alexandracooks.com.  Her recipes are enticing and mouthwatering.  I just want to try every single one of them!  And I'm sure I will!

This is very easy and quick to make.  One thing to take note of, which she also mentions, is to rely on the toothpick test, rather than just the time.  Be sure the toothpick comes out clean, and there is a nice golden crust starting before taking it out of the oven.  Every oven is different, and you wouldn't want it to be mushy in the middle.  When I made it, letting it go a bit longer than the 35-45 mins, it was light, fluffy and gorgeously delicious!
